I was wondering if scaling my baits before tossing them out would help any? or maybe making a incision where it wouldnt fataly kill but just wound my bait?

I don't scale my livebaits that im gonna fish. However, I do scale fresh cutbaits such as shad, and carp etc. I'm not saying not to, but I like my livebaits as they are when caught. Good and lively! rollo

I am not saying that flathead do not have a good sense of smell/taste but I have my own ideas of their importance.
I have a theory that flathead use their lateral line to detect vibrations of live fish they eat. They can detect baits in dark muddy water and many times I feel they don't see or smell baits they eat.
Cutting or scaling baits might injure or kill baits and I feel their struggles might be very important to their attraction.
