Not too much in the way of different baits. We only have channel cats here. Spring time is cut rainbow sucker and shrimp. Summer is cut bait goldeye, whole if you can catch them about 6" long or so, fall is live frogs.
I have also had luck with the meat from a fresh water clam.
I understand that blues and flats are a different ball game all together. Local laws are another factor, most live bait we can not use.
I just noticed this was posted in the wrong section..... my bad. Don't hold it against me, dreaming of big flatheads.

The past couple years I've almost only been using shad. Mostly because they work, you can't go wrong with a chunk of shad. This weekend was a tournament i didn't have time to catch bait for so i threw my minnow trap in the creek. went to the tourney with a nice bucket full of chubs. I forgot how much channels love these things. First pole in got a bite within minutes. needless to say we ran out of bait within the first hour and a half. caught a sheephead and cut it up. not even a nibble. went and netted some shad. and had a great day. Definitly a great reminder how awesome chubs are for channels. Man i love them things. You can never ever go wrong with some nice creek chubs. I just went today with Chubs and a few rock bass. My dad caught a decent channel cat, 5 lbs. And even flatheads love them, my dad's best at 38 lbs. was caught on about a medium sized creek chub. Still one of our favorite baits to use!

My favorite bait would have to be live baits like goldfish, bluegill, and bass
